Ingredients
- 3 ripe peaches, sliced
- 1 large English cucumber, thinly sliced
- ¼ small red onion, very thinly sliced
- ⅓ cup fresh mint leaves
- 2 oz crumbled feta cheese (optional)
- Handful of arugula or baby greens
Honey Lime Dressing
- 2 tbsp olive oil
- Juice of 1 lime
