This Farmhouse Recipe is a classic comfort dish – Parmesan Chicken with Lemon & Basil

Ingredients:
- 2 boneless, skinless organic chicken breasts
- ½ cup freshly grated Parmesan cheese
- ¼ cup breadcrumbs (preferably panko or homemade for crispness)
- 2 tablespoons extra virgin olive oil
- 1 garlic clove, finely minced
- Zest & juice of ½ a lemon
- 4–6 fresh organic basil leaves, chopped (plus extra for garnish)
- Salt & freshly cracked black pepper
- Optional: 1 tablespoon butter (for extra richness)
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the Parmesan coating:
- In a shallow bowl, mix Parmesan, breadcrumbs, lemon zest, chopped basil, salt, and pepper.
- Season the chicken: pat the chicken breasts dry and season lightly with salt and pepper.
- Sear for flavor: heat olive oil in an oven-safe skillet over medium heat. Add garlic and sauté 30 seconds until fragrant. Place chicken in the skillet and cook 2–3 minutes per side, until golden.
- Add topping: sprinkle the Parmesan mixture generously over each chicken breast, pressing lightly so it sticks. Dot with a little butter for extra crispness.
- Bake until done: transfer skillet to the oven and bake 12–15 minutes, until chicken is cooked through (internal temp 165°F).
- Finish with lemon & basil: remove from oven and drizzle with lemon juice. Garnish with fresh basil leaves.
