When corn is juicy and tomatoes are bursting with flavor, this skillet becomes pure summer magic. The char brings smoky depth, the tomatoes add fresh acidity, and the drizzle of hot honey ties everything together with a sweet little kick. It’s quick, colorful, and the kind of dish you’ll make on repeat all season long.

Ingredients (Serves 4)

Skillet Base

  • 3 cups fresh corn kernels (3–4 ears)
  • 1 pint cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 small red onion or 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp sea salt (more to taste)
  • Freshly cracked pepper

Finishing Touches

  • 2–3 tbsp hot honey (market-bought or homemade, recipe included below)
  • Fresh basil or cilantro, torn

  • Optional:

    • Crumbled feta or goat cheese
    • A squeeze of lime
    • Chili flakes for extra heat

INSTRUCTIONS

1. Char the corn
Heat olive oil in a large skillet over medium-high heat.
Add the corn and let it cook undisturbed for 2–3 minutes until lightly charred.
Stir and repeat until you achieve a golden, smoky color.

2. Add aromatics
Add the sliced onion/shallots and cook 2–3 minutes until softened.
Stir in garlic, smoked paprika, salt, and pepper. Cook for 1 minute.

3. Add tomatoes
Add cherry tomatoes and cook 3–4 minutes, just until they begin to soften and release their juices but still hold shape.

4. Finish with hot honey
Remove from the heat and drizzle your hot honey right over the warm skillet.
Toss gently to coat.

5. Optional boosts
Top with fresh basil or cilantro.
Add feta, goat cheese, or lime for extra brightness.
