Avocado, Citrus, & Whipped Feta on Toasted Sourdough

This tartine (open-faced sandwich) layers bold farmers market flavors onto artisan bread. It’s easy, elevated, and perfect for entertaining or treating yourself.

Ingredients (Serves 2–3)

  • 2–3 thick slices sourdough
  • 1 ripe avocado, thinly sliced or smashed
  • 1 Cara Cara orange or blood orange, peeled and sliced into rounds
  • 1 small handful arugula or baby greens
  • 2 tbsp pomegranate seeds (optional, but stunning!)
  • Olive oil, for drizzling
  • Sea salt & cracked pepperFor the whipped feta:
  • 1/2 cup feta cheese (from your favorite market vendor)
  • 2 tbsp Greek yogurt
  • 1 tsp lemon zest
  • 1 tbsp olive oilDirections

    1. Make the whipped feta: In a small bowl or blender, combine feta, yogurt, lemon zest, and olive oil. Blend until smooth and fluffy. Set aside.
    2. Toast the sourdough:Grill or toast the bread slices until golden and crispy.
    3. Assemble your tartines: Spread a generous layer of whipped feta on each toast slice. Top with avocado, citrus slices, and greens. Sprinkle with pomegranate seeds, sea salt, and pepper.
    4. Finish with a flourish: Drizzle a touch of high-quality olive oil over the top. Serve immediately.
