Avocado, Citrus, & Whipped Feta on Toasted Sourdough

This tartine (open-faced sandwich) layers bold farmers market flavors onto artisan bread. It’s easy, elevated, and perfect for entertaining or treating yourself.
Ingredients (Serves 2–3)
- 2–3 thick slices sourdough
- 1 ripe avocado, thinly sliced or smashed
- 1 Cara Cara orange or blood orange, peeled and sliced into rounds
- 1 small handful arugula or baby greens
- 2 tbsp pomegranate seeds (optional, but stunning!)
- Olive oil, for drizzling

- 2 tbsp Greek yogurt
- 1 tsp lemon zest

1. Make the whipped feta: In a small bowl or blender, combine feta, yogurt, lemon zest, and olive oil. Blend until smooth and fluffy. Set aside.
2. Toast the sourdough:Grill or toast the bread slices until golden and crispy.
3. Assemble your tartines: Spread a generous layer of whipped feta on each toast slice. Top with avocado, citrus slices, and greens. Sprinkle with pomegranate seeds, sea salt, and pepper.
