Black Bean + Butternut Soup

Ingredients

  • 1 Tbsp. raw/organic extra virgin olive oil
  • 1 medium organic yellow onion, chopped
  • 3 organic cloves garlic, chopped
  • ½ a small head of cabbage, chopped (heaping 2 cups)
  • 3 cups cubed organic butternut squash (sweet potato would be good too)
  • 3 cups organic/GF low sodium vegetable broth
  • 1 tsp. organic cumin
  • 1 tsp. organic/GF cocoa powder
  • pinch of organic/GF chipotle powder or cayenne pepper
  • 2 cups organic/GF cooked, black beans (about one can, rinsed and drained)

Balsamic Roasted Roots + Spinach Sauce

Ingredients

  • 1 lb. organic assorted carrots
  • 1 lb. organic assorted small beets
  • 2 Tbsp. raw/organic extra virgin olive oil
  • 2 Tbsp. organic balsamic vinegar, divided
  • 1/2 tsp. sea Salt
  • 1/2 tsp. black pepper
  • 1 bunch fresh organic spinach leaves
  • 1 Large organic clove garlic, minced
  • 2 tsp. organic unsalted butter
  • 1/2 Cup organic whole milk
  • 1/3 cup finely grated organic Parmesan cheese
  • 1/2 tsp. GF/organic prepared horseradish, optional
  • Squeeze of fresh organic Meyer lemon juice
  • Salt & pepper to taste

  • All-purpose flour
  • 2 tablespoons raw/organic olive oil
